Ingredients
- 5 lb new red potatoes - cooked, peeled and sliced
- 1 lb bacon
- 1 large onion chopped
- 1 T. salt
- 2 T. sugar
- 2 T. parsley
- 1/2 t. pepper
- 3/4 cup water
- 1/2 cup vinegar
Preparation
Step 1
Place potatoes in pressure cooker with small amount of water in pot. Cook for 10 minutes, then turn off flame. For immediate slicing/peeling, cool potatoes with cool water several times, or else allow to cool on stove for about an hour. Peel and slice.
In pan brown 1 lb bacon cut into small pieces, then drain most of bacon fat, leaving some. Then to bacon fat add chopped onion, salt, sugar, parsley, pepper, water and vinegar. Bring to slight boil to blend and infuse flavors. Add contents to potatoes and toss. Add vinegar to taste.
