Ingredients
- 4 1/2 cups old-fashioned oats
- 1/3 cup sliced almonds
- 1/3 cup pecan halves
- 2 level tsp. cinnamon
- 1/2 tsp. salt (optional)
- 1/2 cup apple juice
- 1 tbsp. vegetable oil
- 1/2 cup dried cranberries
- 1/2 cup golden raisins
Preparation
Step 1
1. Preheat oven to 350o. Spray a heavy large rimmed baking sheet with olive oil spray.
2. In a large bowl, combine oats, almonds, pecans, cinnamon and salt. In another medium sized bowl, whisk apple juice and vegetable oil. Pour liquid mixture over oatmeal mixture and stir to coat.
3. Spread mixture out on prepared baking sheet. Bake until lovely golden brown at edges, about 20 minutes. Add cranberries and raisins, stir to blend. Place back in oven and bake until granola is golden and beginning to dry, stirring occasionally - about 12 minutes longer. Cool completely on baking sheet.
4. Fill snacker cup with granola and cool cup with your favorite low fat yogurt. Enjoy breakfast on the go!
