Ingredients
- Salad:
- 1/4 cup kalamata olives, pitted and chopped
- 1 tablespoon capers, rinsed and drained
- 1/2 small Vidalia onion, sliced thinly
- 1/2 lb cherry tomatoes, halved
- 1/2 cup chopped celery
- 1 bunch arugula, torn into bite size pieces
- 2 cups baby spinach, leaves torn if large
- Dressing:
- 1/4 cup extra-virgin olive oil
- 1 teaspoon chopped fresh thyme
- 2 tablespoons red-wine vinegar
- Small pinch of sea salt and pepper
Preparation
Step 1
In two Fit & Fresh Salad Shakers, make a layer of olives, capers, onion, tomatoes and celery on the bottom. Top with spinach and arugula.
To make the quick and easy dressing, whisk olive oil, fresh thyme and vinegar in a bowl, season with salt and pepper. Divide dressing into both salad dressing compartments. Add dressing to salad when ready to eat!
