coconut cinnamon french toast, baked
- 1/2 stick butter, softened
- 8 oz cream cheese, softened
- 1/2 cup maple syrup, divided in half
- 1 lg loaf cinnamon raisin bread, sliced into fingerlike pieces
- 8 lg eggs
- 1 1/2 cups milk
- 1/2 tsp vanilla extract
- 1/4 cup coconut
- walnuts (optional)
- 4-5 tbl brown sugar
- powdered sugar
mix butter, cream cheese and half of the maple syrup. heat in the microwave until softened to a creamy texture, making sure to eliminate all lumps by mixing well with a whisk.
place sliced raisin bead evenly in a well buttered 13x9 glass baking dish. spread some cream cheese mixture on top of the bread slices, leaving room for the egg mixture to be absorbed through the cream cheese mixture. beat the eggs, milk, remaining maple syrup and vanilla. pour over the bread and sprinkle with the coconut and walnuts. sprinkle brown sugar and cinnamon on top of the bread dish. cover with foil and refrigerate overnight. uncover and bake for 40-50 min at 350 cut into rectangles and serve on plates drizzled with maple syrup and sprinkled with powdered sugar. serve hot.
