Ingredients
- 7 medium potatoes, cut into 1/2 inch cubes
- 1/4 cup butter, cubed
- 1 cup sour cream
- 1 envelope ranch salad dressing mix
- 1 cup shredded cheddar cheese

Step 1
Place potatoes in a greased 11 X 7 inch baking dish; dot with butter. Cover and bake at 325F for 60-65 minutes or until tender.
Combine sour cream and salad dressing mix, spoon over the potatoes. Sprinkle with cheese. Bake, uncovered, for 5-10 minutes or until cheese is melted.
(Optional preparation: the day before peel and cube the potatoes, then boil until tender. Drain and store in refrigerator. The next day place potatoes in the prepared pan, dot with butter and microwave on high until heated through, then porceed with mixing ingredients to add to potatoes. Bake at 325F.)
