Ingredients
- 1 pint pea beans
- 1/4 pound fat salt pork
- 1 tsp salt
- 1 Tbs sugar
- 1/2 cup molasses
- 1/2 tsp mustard
- 1 onion
- boiling water

Pick over beans, cover with cold water and soak over night. Next day, add more water to cover, heat slowly snd simmer until skins burst. Drain beans, reserving cooking water. Scald pork and scrape, remove 1/4 inch slice and put in bottom of 2 quart bean pot with the onion.
Cut through rind of remaining pork every half inch, making one inch cuts. Put beans in pot and bury pork in them.
Bring reserved water to boiling point, add one cup to salt, molasses and sugar mixed together. Pour over beans and add enough more water to cover beans.
Cover bean pot and bake six to eight hours in 225 degree oven. Add water as needed. Uncover the last half hour of cooking, so that rind becomes brown and crisp,
