WESTERN POTATO ROUNDS
- 2 large unpeeled baking potatoes
- 1 cup (4 oz) shredded co-jack cheese
- 6 bacon slices, crisply cooked, drained and crumbled
- 1/3 cup green onion slices
- 1/4 cup bbq sauce
- vegetable oil
Preheat oven to 450*.
Using a garnisher, cut potatoes in 1/4-inch thick slices. Generously spray both sides of the potato with oil; place on a 15" round baking stone. Bake for 20 minutes or until lightly browned; remove from oven.
In a bowl, combine cheese, bacon and green onion. Using a brush, generously brush potato with bbq sauce; sprinkle with cheese mixture. Return potato slices to onion. Bake 3-5 minutes or until cheese is melted.
