Cannelini Bean with Kielbasa and Kale Soup

Ingredients

  • 1 clove garlic, crushed
  • 2 carrots, peeled and sliced
  • 1/2 small onion, slivered
  • 1 rope kielbasa sausage, sliced
  • kale, chard, or spinach, rinsed and coarsely chopped
  • 1 T. chopped fresh parsley
  • 1 tsp. chopped fresh thyme
  • chicken stock
  • 1 can diced tomatoes
  • 1 can cannellini beans
  • 1 T. grated parmesan cheese

Directions:

In a saucepan, sauté the garlic, onion, carrots, kale and sausage. Season with 2 teaspoons of parsley, thyme and salt and pepper. Add chicken broth and can of diced tomatoes. Bring to a boil and cook until vegetables are tender. Add can of beans. Heat, and serve immediately garnished with Parmesan cheese and remaining fresh parsley.
