Ingredients
- 1/4 cup flour
- 1 1/2 cups chopped onions
- 1 cup chopped with leaves celery
- 1 6 oz. can tomato paste
- 1 8 oz. can tomato sauce
- 1 cup water
- 1 teaspoon pepper
- 1 dash tabasco sauce, more or less to taste
- 1 tablespoon lemon juice
- 1/2 cup chopped parsley
- 2 to 3 cups cooked rice
- 1/4 cup bacon grease
- 1 cup chopped green bell peppers
- 1 cup chopped scallions
- 2 cloves minced garlic
- 1 16 oz. can undrained tomatoes
- 5 teaspoons salt
- 1/2 teaspoon cayenne pepper
- 2 to 3 bay leaves
- 1 teaspoon Worcestershire sauce
- 4 pounds peeled and deveined,raw shrimp

Preparation
Step 1
Make dark rue out of flour and bacon grease.
Add onions, celery, bell pepper and garlic.
Saute until soft.(20-30 minutes). Add tomato paste and mix well.
Add tomatoes, tomato sauce, spices, tabasco, bay leaves, sugar, worcestershire, and lemon juice.
Simmer covered one hour, stirring occasionally. Add shrimp- cook 5-15 minutes until done.
Let sit. Overnight is best. Add parsley just before serving.
