Ingredients

    cup flour

  • cups chopped onions

    cup chopped with leaves celery

    6 oz. can tomato paste

    8 oz. can tomato sauce

    cup water

    teaspoon pepper

  • 1

    dash tabasco sauce, more or less to taste

    tablespoon lemon juice

  • ½

    cup chopped parsley

  • 2 to 3

    cups cooked rice

  • ¼

    cup bacon grease

  • 1

    cup chopped green bell peppers

  • 1

    cup chopped scallions

  • 2

    cloves minced garlic

  • 1

    16 oz. can undrained tomatoes

  • 5

    teaspoons salt

  • ½

    teaspoon cayenne pepper

  • 2 to 3

    bay leaves

  • 1

    teaspoon Worcestershire sauce

  • 4

    pounds peeled and deveined,raw shrimp

Directions

Make dark rue out of flour and bacon grease. Add onions, celery, bell pepper and garlic. Saute until soft.(20-30 minutes). Add tomato paste and mix well. Add tomatoes, tomato sauce, spices, tabasco, bay leaves, sugar, worcestershire, and lemon juice. Simmer covered one hour, stirring occasionally. Add shrimp- cook 5-15 minutes until done. Let sit. Overnight is best. Add parsley just before serving.
