Ingredients
- 1 1/2 cups flour
- 1 tea. salt
- 1 tea. baking powder
- 1/3 cup plus 1 Tbsp. melted butter, divided
- 1 cup sugar
- 4 Tbsp. lemon juice, divided
- 2 beaten eggs
- 1/2 cup milk
- 2 Tbsp. grated lemon zest
- 1 1/2 cups fresh or frozen blueberries, plus additional for garnish
- 1 cup powdered sugar, sifted
Preparation
Step 1
Preheat ovben to 350 degrees.
In medium bowl, whisk together four, salt and baking powder.
In a large bowl, whisk together 1/2 cup melted butter, sugar, 3 Tbsp. lemon juice and eggs. Gently mix dry ingredients into wet ingredients, alternating with milk, mixing well after each addition. Fold in lemon zest and blueberries.
Pour batt3r into a lightly greased 45x8 loaf pan. Bake for 60 minutes, until tops is golden and toothpick inserted comes out clean.
Cool in pan 10 minutes before removing to a wire rack.
Glaze: Whisk together 1 Tbsp. melted butter and 1 Tbsp., lemon juice with powdered sugar. Drizzle over loaf. Let cool completely.
