  • 4 green onions chopped
  • 4 cups Japanese instant dashi see * Note (or one 14 1/2-oz can vegetable broth mixed with one can water)
  • 3 tablespoons red miso paste see * Note
  • 1 pound firm tofu cut into cubes

Step 1

* Note: Dashi is Japanese broth made from dried bonito flakes, dried seaweed and water. You can find dashi and miso at asian food stores or ethnicgrocer.com.

Bring dashi or broth and water to a boil in a saucepan. Place miso in a bowl; whisk in a ladleful of hot stock.

Pour miso mixture back into saucepan. Heat until piping hot, but not boiling. Add tofu and green onions. Serve immediately.
