Ingredients
- 4 medium sweet potatoes (about 1 1/2 pounds), cut lenghtwise into thick wedges
- 1/4 cup olive oil
- 1 teaspoon salt
- 4 cloves garlic, finely chopped
Preparation
Step 1
1. Preheat oven to 400F. Place potatoes on a large baking sheet and toss with 3 Tablespoons olive oil and salt. Roast until browned, 30 to 40 minutes, turning over once halfway through baking time.
2. Combine garlic and remaining Tablespoon oil in a small bowl. Brush sweet potatoes with garlic and oil and roast until garlic is cooked, 2 to 3 minutes.
