Ingredients

  • 2 tablespoons oil
  • 1/2 onion thinly sliced
  • 1 package sauerkraut - (1 lb) rinsed, drained
  • 4 cooked hot dogs sliced
  • 2 cans reduced-sodium beef broth - (14 1/2 oz ea)
  • 1 can water
  • 2 teaspoons mustard
  • 2 packets sugar substitute
  • 1 bay leaf
  • Salt to taste
  • Freshly-ground black pepper to taste

Preparation

Step 1

Heat oil in a medium soup pot over medium-high heat. Add onion and cook 5 minutes, until softened. Stir in sauerkraut, hot dogs, broth, water, mustard, sugar substitute and bay leaf.

Simmer 5 minutes for flavors to blend. Remove bay leaf. Add salt and pepper to taste.
