QUINOA****Crunchy Thai Quinoa Salad

16/03/15 - Made for work lunch. Quite good. I first served it over some arugula but that's just too much going on. Just the salad, and the avocado if you have it.

Ingredients
- For the dressing:
- 2 cups cooked quinoa (6 tablespoons raw)
- 2 cups cabbage or carrot slaw (I used a bag of PC carrot slaw)
- 1/2 sweet bell pepper, sliced
- 1 jalapeno pepper, diced or sliced
- 1/4 red onion, sliced
- 2 tablespoons each chopped fresh cilantro, shredded fresh mint and basil
- 2 sliced green onions
- 1/4 cup cashew halves or peanuts (2 oz.)
- 1/2 cup edamame or garbanzos (optional) (I didn't use these the first time as I had about 20 spears of asparagus that I wanted to use up so I blanched and added them instead)
- 4 tablespoons peanut butter or almond butter
- 1 teaspoon freshly grated ginger
- 2 tablespoons soy sauce
- 1/2 tablespoon honey
- 1/2 tablespoon red wine vinegar
- zest and juice of 1 lime
- 1 teaspoon sesame oil
- 2 - 3 tablespoons olive oil
- pinch of cayenne pepper or drizzle of sambal oelek
- Water to thin, if necessary
- 1/4 avocado per portion, optional
Preparation
Step 1
To make dressing: Add peanut butter and honey to a medium bowl and whisk to blend. Add remaining ingredients and stir until mixture is smooth and creamy. If you want a thinner dressing, simply stir in a teaspoon or two of water or olive oil.
Add quinoa and remaining ingredients to the dressing and stir to mix.
Serve chilled, over arugula or spinach or at room temperature with lime wedges and optional avocado, if desired.
