Place the ham, fat side up, on a rack in an open roasting pan. Insert a meat thermometer in the ham so that the bulb reaches the center of the largest part and does not rest on bone or fat. Roast at 300 degrees until meat thermometer registers 150 degrees. Do not cover the pan or add any water. Allow 15 to 20 minutes per pound for a whole ham, 20 to 25 minutes per pound for a half ham. About 45 minutes before the ham is done, remove from the oven and take off any rind except for a "collar" around the shank bone. Cover the fat side with any desires glaze - such as a mixture of brown sugar and fruit juice. Stud with whole cloves. Return the oven and finish cooking.
