Ingredients
- 3 garlic cloves, minced
- 2 egg yolks
- 1 1/2 c olive oil
- lemon juice
- salt
- pepper
Preparation
Step 1
Whisk minced garlic with 2 egg yolks. Gradually whisk in olive oil. Add lemon juice, salt & pepper to taste.
Variations:
Spicy Aioli- To above recipe add hot sauce.
Olive Aioli- Add 2 tbsp. olive tapenade to aioli recipe.
Orange Saffron Aioli- Make aioli with orange juice instead of lemon juice. Steep 1/2 tsp saffron in 2 Tbsp Pernod for 5 minutes, then add to aioli.
