Ingredients

  • 2 c whole wheat flour
  • 2 c spelt flour
  • 4 t baking soda
  • 4 t cinnamon
  • 1 t salt
  • 3/4 c brown sugar
  • 6 beaten eggs
  • 1 c oil
  • 1 t vanilla
  • 3 c grated carrots
  • 3 c grated apple
  • 1 1/2 c coconut
  • 1 1/3 c chopped pitted dates
  • 1 1/2 c walnuts

Preparation

Step 1

Combine flours,soda,cinnamon and salt in one bowl. Beat sugar,eggs,oil and vanilla until fluffy in second bowl. Combine wet and dry ingredients until well mixed. Combine remaining ingredients in a bowl and mix well. Add these to the batter mixture. Fill muffin cups and bake at 375*F for 25 minutes. Makes 24 muffins!
