Ingredients
- 1 1/2 tsp. baking soda
- 1 tsp. water
- 1 tsp. vanilla
- 1 1/2 c sugar
- 1 c water
- 1 c light corn syrup
- 3 T butter
- 1 pound of peanuts

Step 1
. Mix the baking soda, water and vanilla together and set aside
. Place a silpat or greased parchment on a half sheet pan and keep warm in a 200 degree oven
. Cook the sugar, corn syrup, water to 240 degrees over medium heat
. Stir in the butter and the peanuts and constantly stir until you reach 300 degrees, turn off heat and stir in the baking soda mixture
. Pour onto baking sheet and spread out using a greased off set spatula, set aside to cool completely, once cool break the peanut brittle into pieces
