Ingredients
- 1 clove garlic
- 1/4 c. oil
- 1 c. fine bread crumbs
- 1/2 c. finely grated Cheddar cheese
- 1/4 c. grated Parmesan cheese
- 1 tsp. salt (opt.)
- 1/8 tsp. pepper
- 6 chicken breasts, skinned and boned
Preparation
Step 1
Add garlic to oil and let stand 20 minutes. Remove garlic. Mix together bread crumbs, Cheddar cheese, Parmesan, salt and pepper. Dip each breast into oil, then in crumb mixture. Place on a shallow 15x10-inch pan, tucking in sides to form a neat roll. Bake at 350 degrees for 45 minutes or until done. Makes 6 servings.
