Ingredients
- 1/2 Cup shortening
- 1 Cup Sugar
- 2 Cups sifted flour
- 1/2 tsp salt
- 1 tsp baking soda
- 1 tsp baking powder
- 2 eggs
- 3 large or 5 small very ripe bananas, mashed and beaten to a soft smooth pulp
- 1/2 cup chopped pecans
Preparation
Step 1
Cream shortening and sugar well. Add one tablespoon of flour. Beat in the eggs one at a time. Add remaining flour and banana pulp alternately, reserving 1/2 cup flour. With this sift salt, baking soda and baking powder. add, along with the nuts. Pour batter into well-greased bread loaf pan, pulling dough to ends and sides of pan to make a well-shaped loaf. Bake one hour in 350 degree oven.
