- 3/4 cup Atkins Bake Mix
- 1 tablespoon cocoa powder
- 1 1/2 teaspoons baking powder
- 12 packets sugar substitute
- 1/3 cup unsweetened peanut butter
- 1/2 cup heavy cream
- 2 eggs beaten
- 1 teaspoon vanilla extract

Step 1
Heat oven to 375 degrees. Whisk dry ingredients in a bowl. Mix peanut butter, cream, egg and vanilla extract until smooth. Add to bake mix mixture; stir until blended.
Drop dough by tablespoonfuls onto greased baking sheets. Smooth dough with fingertips and press cookies with the back of a fork to flatten. Bake 8 to 10 minutes, until browned. Cool on sheets 1 minute before transferring to wire racks to cool completely.
