Chicken Enchiliadas

Ingredients

  • 1/4 cup butter
  • 1 onion sliced
  • 1 pound bonless chicken cut into cubes
  • 1 can (4 oz) diced green chiles
  • 3 ounces cream cheese
  • 1/2 tea salt
  • 1/3 cup vegetable oil
  • 10 tortillas
  • 1/3 cup half and half
  • 1 cup shredded cheese

Preparation

Step 1

1. Heat oven to 350. Use 13 by 9 dish- coat with cooking spray
2. Melt butter and add onion; cook for 5 minutes. Add chicken and cook 5 more minutes. Turn off heat and add chiles, cream cheese and salt.
3. Heat oil over medium heat- add tortilla and cook until limp.
4. Spoon 1/3 cup filling down the center. Roll and set seam side down. Drizzle with halof and half and cheese.
5.Bake uncovered at 350 for 25 minutes until top is brown.
