Chili Meatball Casserole

Ingredients
- 2 lbs potatoes
- 1 large onion, chopped
- 2 bell peppers. chopped
- 17oz can beans of choice, drained (this can be anything from brown beans to kidney beans, white beans or any kind of mix you like)
- 1/2 cup corn
- 4 tbsp salsa dip
- 4 tbsp ketchup
- 2 garlic cloves, chopped
- 1 tsp chili powder
- 1 14oz can diced tomatoes
- 2 tsp tomato paste
- 2 tsp worcestershire sauce
- 1 tsp sweet paprika powder
- 1 tsp dried parsley
- 1 tbsp dried parsley
- 1/4 cup breadcrumbs
- 2 tbsp sweet chili sauce
- 1/4 tsp ground cumin
- 1/2 tsp curry powder
- 1/2 tsp nutmeg
- 1 cup cheese, grated
- 2 tbsp oil
- 1 egg
- pepper
- salt

Preparation
Step 1
1. MASHED POTATOES: Boil potatoes in salted water and mashed with hot milk, a little butter and seasoned with pepper and nutmeg.
2. Season one pound ground beef with sweet paprika powder, salt to taste (1 1/2 tsp or so), pepper to taste, curry powder, nutmeg, 1 tsp dried parsley and sweet chili sauce. Break egg over mixture, add breadcrumbs and mix it all up. Wet hands, slightly, and form small meatballs.
3. Heat 1 tbsp oil in pan and brown the meatballs (about 5 minutes). Remove from pan.
4. Heat 1 more tbsp oil in pan and cook onion, garlic, and bell peppers until soft. Add tomato paste, cumin, chili powder, diced tomatoes, salsa dip, ketchup, Worcestershire Sauce and 1 tbsp. dried parsley. Simmer sauce for 10 minutes. Taste and add salt, if needed.
**Depending on how spicy the salsa dip and chili powder are, you may want to add a few splashes of Tabasco, or other hot pepper/chili sauce. If sauce is too acidic, you can cut it by adding a little brown sugar.
5. Add beans and corn and simmer for an additional 5 minutes.
6. Add meatballs and check seasoning. Transfer mixture to a large baking dish. Top with mashed potatoes, draw some peaks. Sprinkle cheese on top.
7. Bake at 250ºF, for 20-25 minutes, until cheese turns golden brown and bubbles around the edges.
