Hong Kong Stir-Fry

This is my go-to recipe for using up left-over pot roast...so easy, quick, and flavorful!

Ingredients

  • 1 tablespoon oil
  • 1 small can water chestnuts, drained
  • 1 green or red bell pepper, julienned
  • 1 small onion, cut in thin strips
  • 1 clove garlic, minced
  • 2 cups cooked julienned strips of beef
  • 1 6 oz. package frozen peas pods
  • 1/4 cup soy sauce
  • 1/2 cup beef broth
  • 2 cups hot cooked rice

Preparation

Step 1

Heat oil in wok or 10-inch skillet over medium-high heat. Add first 4 ingredients; cook, stirring 4 minutes. Add next 4 ingredients; cook, stirring 4 minutes. Serve over hot cooked rice.
