Coconut Flour Apple Pancakes

When you’re cooking with coconut flour only a small amount of the actual flour is needed, and the recipe will contain a high percentage of eggs, making it a great source of protein and a long lasting breakfast that leaves you feeling full for a while. Make sure to use high quality eggs.

Ingredients

  • 3 eggs
  • 3 tablespoons butter
  • 1/4 cup milk
  • 1 teaspoon honey or maple syrup (Grade B is best)
  • 1/2 teaspoon sea salt
  • 1 teaspoon cinnamon
  • 3 tablespoons coconut flour
  • 1 medium apple, cored and either shredded or finely chopped

Preparation

Step 1



Combine all ingredients except apple in a bowl and blend with a mixer until very well blended and all clumps have been removed.

Fold in apple bits and stir to combine.

Cook in a preheated, greased skillet over medium heat until golden on both sides. Pancakes are usually ready to flip when edges begin to look set.
