Ingredients
- 5 med. potatoes
- 1 med. onion
- 1 beaten egg
- 2 T. all-purpose flour
- 1/2 tsp. salt
- 1/8 tsp. white pepper
- Oil

Peel potatoes and shred in small holes of grater. Shred onion on large holes. Drain potatoes and onion in colander, pressing out as much liquid as possible. In a large mixing bowl, stir together grated potatoes and onion, egg, flour, salt and pepper. In a 10-inch skillet, heat about 1-inch of cooking oil. For each latke, drop about 1 tablespoon of mixture into the skillet; cook over medium heat for 2 to 4 minutes or until golden and crisp, turning once during cooking. Drain on paper towels. Serve with yogurt, sour cream, or applesauce.
