Campers Breakfast

Ingredients

  • 1 pkg. frozen O'Brien potatoes thawed
  • 1 1/4 c shredded cheese
  • 8 strips of bacon cooked and chopped
  • 1/2 tsp salt
  • 1/4 tsp pepper

Preparation

Step 1

Prepare campfire or stove on medium heat. Toss potatoes with 3/4 c cheese, bacon, salt and pepper. Divide mixture into four helping s and using heavy duty foil place in center of foil. Make sure to make four foil packets. Fold foil around mixture and place on stove or campfire, cooking 6-9 minutes on each side. Open packets carefully to allow steam to escape. Sprinkle with remaining cheese. Serve with eggs and pico de gallo.
