Ingredients

    tablespoons olive oil

  • 1

    teaspoon dried thyme

  • 1/2

    teaspoon salt

  • 1/2

    teaspoon freshly-ground black pepper

  • 2

    medium zucchini scrubbed, and cut into 2" pieces

  • 2

    red bell peppers seeded, and cut into 2" pieces

  • 18

    large white mushrooms washed, and stems removed

Directions

Combine oil, thyme, salt, and pepper in a very large bowl or 2 gallon resealable bag. Add vegetables, toss to coat. Marinate 30 minutes. Thread vegetables on 6 metal skewers. Grill over medium heat 15 minutes, turning occasionally, until vegetables are crisp-tender and have grill marks. This recipe yields 6 servings.
