Sirloin Tips Ragout Au Vin

Ingredients

  • 3 pounds sirloin tips, cubed
  • 3 Tbs butter
  • 3 ounces tomato paste
  • 2 Tbs wine vinegar
  • 1 cup burgundy
  • 1 stick cinnamon
  • 2 bay leaves
  • 2 pounds small white onions, peeled (or two jars cooked white onions)
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1 tsp cornstarch

Preparation

Step 1

Place meat cubes in deep saucepan with butter. Simmer over medium heat until meat is brown and tender. Mix tomato paste, vinegar and wine with browned meat. Add cinnamon, bay leaves and tiny onions. Season with salt and pepper. Simmer covered for one hour. Mix cornstarch with 1/2 cup of water and blend into sauce. Serve with tossed green salad and French bread.
