Orange Roasted Tofu

Ingredients
- 3 cloves minced garlic
- 1 inch to 1 1/2 inch piece
- of peeled ginger
- 1 Tablespoon chili powder
- 2 medium thin-sliced shallots
- 2 Tablespoons red miso
- 2 Tablespoons olive oil
- 1/8 teaspoon black pepper
- 1 cup chicken broth
- zest of 1 orange
- juice of the same orange
- 1 block firm or extra-firm tofu,
- rinsed, patted dry with a towel,
- and cut into 1/2 inch slices
Preparation
Step 1
Preheat oven to 425 degrees. Combine all ingredients except the tofu. Lay the tofu in a 9 x 13 inch baking dish, and pour the marinade over the tofu. Bake until most of the liquid has evaporated and turned saucy, about 30-40 minutes. ( The tofu can also marinate in the refrigerator for 1 hour or overnight. )
