Vinaigrette, Pomegranate

Ingredients

  • 1/2 cup pomegranate juice
  • 1 small shallot, minced
  • 2 TB red wine vinegar
  • 1 TB honey
  • 1/4 - 1/2 cup olive oil
  • salt and pepper

Preparation

Step 1

Place pomegranate juice and shallot in small saucepan on stove. Bring to a boil, then simmer until reduced to about 1/4 cup. Whisk in vinegar, honey and olive oil. Season to taste with salt and pepper.
