Beer Can Chicken

Ingredients

  • 1 ( 12 ounce ) can of beer
  • ( such as Budweiser )
  • 1 whole chicken
  • ( several pounds size )
  • a couple Tablespoons olive oil
  • 3 about 3 Tablespoons mixed spices
  • ( salt, garlic, paprika, cayenne )

Preparation

Step 1

Remove the upper rack from the oven, and place the other rack on its lowest rung. Preheat oven to 400 degrees. Rinse the chicken inside and out and pat dry with paper towels. Open the beer can, pour out ( or drink ) about half of the beer, and sprinkle about 2 teaspoons of your spice mix into the can. Sprinkle about a teaspoon of the spice mix inside the chicken. Brush the outside of the chicken with olive oil, then sprinkle with spice mix. Place the chicken in a 9x9 inch baking dish, lowering the chicken onto the upright beer car, with the chicken's legs forward, serving as a tripod. Bake until nicely browned, about 1 hour and 15 minutes. ( Note that the roasting chicken will splatter grease around inside the oven, but you won't mind once you get a taste of the finished chicken. )
