Ingredients

  • 4 lbs beef boneless chuck roast
  • 1 tbs olive oil
  • 1 tsp salt
  • 1/2 tsp pepper
  • 6 medium onions, sliced
  • 1 1/2 cup beef broth
  • 3/4 cup beer
  • 2 tbs packed brown sugar
  • 3 tbs dijon mustard
  • 2 tbs cider vinegar

Preparation

Step 1

1. Trim excess fat from beef. Heat oil in 10inch skillet over med-high heat. Cook beef in oil about 10 min, turning occasionally, until brown on all sides. Sprinkle with salt and pepper.

2. Place onion in 3 1/2 to 6 qt slow cooker. Place beef on top of onions.

3. Mix remaining ingredients pour over beef and onions. Cover and cook on low heat 8-10 hrs or until beef is tender.

4. Remove beef and onions from cooker, using slotted spoon. Cut beef into slices. Skim fat from beef juices in cooker if desired. Serve over beef with juices.
