*GINGER BEEF

Ingredients

  • 2 1/4 cups water
  • 1 cup rice
  • 1/4 tsp. salt
  • 1/4 cup beef broth
  • 2 tbsp. medium sherry
  • 2 tbsp. Soy sauce
  • 1 tbsp. cornstarch
  • 1 tbsp. finely grated gingerroot
  • 1 tbsp. packed brown sugar
  • 1 minced garlic clove
  • 1/4 tsp. dried crushed chilies
  • 2 tsp. canola oil
  • 1 lbs. beef stir-fry strips
  • 1/2 cup sliced onionl lb. bag of frozen mixed vegatables (thawed)
  • Sesame seeds for garnish

Preparation

Step 1

Measure first 3 ingredients into medium saucepan. Bring to a boil. Reduce heat to medium-low. Simmer, covered, for about 20 minutes, without stirring, until water is absorbed and rice is tender.

Meanwhile, combine next 8 ingredients in small bowl,. Set aside.

Heat work or large frying pan on medium-high until very hot. Add canola oil. Add beef and onion. Stir-fry for 4 minutes.

Add vegetables and broth mixture. Stir-fry for about 3 minutes until vegetables are tender-crisp and sauce is boiling and thickened. Fluff rice with fork. Spoon into 4 indivdual serving bowls. Spoon beef mixture over rice.

Garnish with sesame seeds.
