- 1/4 cup Authentic Foods Superfine Sweet Rice Flour
- 1/4 cup Authentic Foods Tapioca Flour
- 1 cup sugar
- 3/4 teaspoon Authentic Foods Vanilla Powder
- 1/4 teaspoon salt
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon Authentic Foods Xanthan Gum
- 1 large egg
- 1/4 cup milk or milk substitute
- 1/2 cup butter
- 1 cup chocolate chips (optional)
- Directions:
- Preheat oven to 350 degrees Fahrenheit.
Preparation
Step 1
In a medium bowl mix all dry ingredients: Authentic Foods Superfine Brown Rice Flour, Authentic Foods Superfine Sweet Rice Flour, Authentic Foods Tapioca Flour, Authentic Foods Vanilla Powder, salt, baking powder, baking soda, and Authentic Foods Xanthan Gum.
Cut the butter into small cubes. Add the butter to the dry ingredients and mix until there is a course crumb consistency (you can obtain the best result by using a kitchen aid mixer with a paddle to mix the butter into the dry ingredients).
Then mix in the egg and milk to the mixture until smooth. If you would like to make chocolate chip cookies, then fold in the chocolate chips.
Using a cookie scooper, a small ice cream scooper or a large tablespoon, scoop the cookie dough onto a cookie sheet. Bake for approximately 15 minutes or until golden brown
