Pancetta-Flavored Braised Cabbage

Ingredients

  • 1/3 cup finely-chopped pancetta - (1 1/2 oz)
  • 1 tablespoon olive oil
  • 1/2 cup finely-chopped onion
  • 1/2 cup finely-chopped fennel bulb
  • 4 cups thinly-sliced green cabbage
  • 1/4 cup reduced-sodium chicken broth
  • 1/4 teaspoon salt
  • 1/4 teaspoon crushed red pepper
  • 1 teaspoon white-wine vinegar

Step 1

In a large skillet over medium-high heat, cook pancetta 3 to 4 minutes, until browned and crisp. Transfer to a plate.

Add oil, onion and fennel to skillet and cook 3 minutes, until lightly browned. Add cabbage, broth, salt and pepper. Reduce heat to medium; cover and cook until tender, 18 to 20 minutes. Stir in vinegar and pancetta.
