    tablespoon butter

  • 1

    tablespoon canola oil

  • 4

    leeks trimmed, cleaned, and cut into 3" pieces

  • 1/2

    cup reduced sodium chicken broth or water

  • 1/4

    teaspoon freshly-ground black pepper

  • 1/3

    cup shredded Gruyere cheese

  • 1/3

    cup grated Parmesan cheese

Directions

In an ovenproof skillet, melt butter and oil over medium-high heat. Add leeks and cook 5 minutes until they begin to "sweat" (release liquid). Add broth, salt, and pepper. Cover and continue cooking 15 minutes until leeks are tender. Uncover and boil off liquid in the skillet. Heat broiler. Sprinkle leeks evenly with cheese. Broil 3 to 4 minutes, 5 inches from heat source, until browned. This recipe yields 4 servings.
