Chicken Soup

Ingredients

  • 1 chicken, split or quartered
  • 1 bay leaf
  • 1 onion, partially cut in 4
  • 6 cloves garlic, sliced
  • Salt and Pepper
  • 3 carrots
  • 1/2 cup rice
  • Chopped parsley
  • 3 qts. water
  • 1 pkg. vegetable soup mix (optional)
  • 3 stalks celery

Preparation

Step 1

Place bay leaf, salt and pepper, onion, soup mix, and garlic in pot and bring to a boil.
Add the chicken and simmer for about 1 hour. Remove chicken and de-bone. Return to pot.
Cut 2 carrots into 1" slices and place in soup along with whole carrot.
Add rice and cook another 45 minutes.
Five minutes before serving remove whole carrot and mash before returning to soup along with parsley.
