Ingredients
- 6 (6-oz.) russet potatoes
- 8 ounces fajita beef
- 1 tablespoon olive oil
- 1 small onion, thinly sliced
- 1 small green bell pepper, seeded and thinly sliced
- 3 tablespoons salsa
- 6 ounces shredded low fat Cheddar cheese
- Guacamole and low fat sour cream (optional)
Preparation
Step 1
Scrub potatoes and bake until cooked through OR re-heat pre-baked potatoes. Heat the oil in a large skillet over medium-high heat; add fajita meat and saute. When meat has almost reached its desired level of doneness, add sliced onion, bell pepper and salsa; cook until vegetables are tender. Top baked potatoes evenly with beef mixture and cheese. Serve with guacamole and sour cream if desired.
SERVING SUGGESTION: Serve a big salad on the side.
VEGETARIAN: Use faux beef strips such as Morningstar Meal Starters.
KOSHER: Use your favorite soy cheese and cultured soy (optional).
