Gourmet Chicken Spaghetti

  • 2 lbs. boned and boiled chicken
  • 8 oz penne pasta
  • sliced fresh mushrooms
  • 8 tbls butter
  • 4 tbls flour
  • 1 cup chicken broth
  • 1 cup cream
  • 1 cup sour cream and mayonnaise
  • 1 tsp dry mustard and salt
  • 3/4 cup parmesan cheese
  • 1/8 cup lemon juice
  • 1/3 cup white wine
  • 1/2 tsp garlic powder and cayenne pepper

Preparation

Step 1

Boil chicken and cut into chunks. Boil pasta in chicken stock. Melt 4 tbls butter in saucepan. Add flour and cook until it bubbles. Add chicken broth and cream and cook until sauce thickens. Remove from heat and add sour cream, mayonnaise, parmesan cheese, lemon juice, wine, and all the spices. Saute mushrooms in remaining 4 tbls butter. Put chicken, pasta, and mushrooms in 9x13 baking pan. Add sauce and mix well. Sprinkle lightly with cayenne pepper and parmesan cheese. Bake @ 350 for 30-40 minutes. Can be made ahead and frozen.
