COFFEE CAKE - MEMOM'S

Ingredients

• 3 C. flour
• 2 C. sugar
• Pinch salt
• 2 1/2 tsp. baking powder
• 1/2 lb. butter, softened
• 1 tsp. vanilla
• 1 C. milk
• 3 eggs
• 1 1/4 tsp. cinnamon

Preparation

Step 1

1. Preheat oven to 350 degrees.

2. Combine the flour, sugar, salt and baking powder. Cut in the butter until mixture is crumbly. Reserve 1 cup of crumb mixture for topping.

2. Add vanilla, milk, and eggs and beat until smooth.

3. Grease and flour 12 x 9 inch cake pan, and pour the batter into the pan. Sprinkle reserved crumb mixture over the batter. Then sprinkle the cinnamon and bake 45 minutes. Cool in the pan and cut into squares.
