Cajun Shrimp Stir-Fry

Ingredients
- 1 pound large shrimp, peeled and deveined
- 1/2 teaspoon Cajun seasoning
- 2 teaspoons canola oil, divided
- 2 medium green bell peppers, seeded, deribbed and cut into strips
- 2 medium red bell peppers, seeded, deribbed and cut into strips
- 2 cloves garlic, pressed
- 1/2 cup white wine OR low sodium chicken broth
- 1 tablespoon lemon juice
- 2 cups cooked brown rice
Preparation
Step 1
Toss shrimp with Cajun seasoning and set aside. Heat 1 teaspoon of oil in a large skillet over medium-high heat; add bell peppers and saute for 6minutes. Reduce skillet heat; add garlic, stirring constantly so that garlic doesn’t burn. Remove bell peppers and garlic from skillet and set aside. Wipe the skillet out with a paper towel; heat remaining oil over medium-high heat; add shrimp and cook for approximately 3 minutes, stirring frequently. Add wine (or broth), lemon juice, bell peppers and garlic; cook for 2 to 3 minutes. Season with hot sauce; serve over brown rice.
