Italian Stuffed Peppers

Ingredients

  • 4 green peppers, halved
  • 4 cloves garlic, crushed
  • 2 ounces anchovies, chopped
  • 14 ounces chopped tomatoes
  • 1 tablespoon basil
  • 1/2 cup cooked rice
  • 8 ounces tomato sauce

Preparation

Step 1

1. Blanch peppers in boiling water until softened (but not soft).

2. Saute garlic in oil from anchovies. Add tomato-rice. Blend well. Fill peppers. Top with tomato sauce.

3. Bake at 350 20 mins.
