Broiled Beef Fajitas

Ingredients
- 1 pound lean beef flank steak, trimmed of all visible fat
- 2 tablespoons lime juice
- 1 1/2 teaspoons chili powder
- 1/2 teaspoon cumin
- 2 cloves garlic, pressed
- 4 whole wheat flour tortillas, warmed
- 4 large Romaine lettuce leaves
- 1/2 cup low fat sour cream
- Chopped cilantro, for garnish

Step 1
Pierce trimmed beef with a fork. In a large zipper-topped plastic bag, combine lime juice, chili powder, cumin and garlic; add beef steak, seal bag and turn to coat; refrigerate overnight and smoosh the bag around occasionally when you have the notion. Preheat oven broiler. Line a METAL broiler pan (NEVER USE GLASS COOKWARE FOR BROILING!) with aluminum foil wrap (for easier cleanup). Broil beef 2 to 3 inches from heat source for 10 to 12 minutes, turning after 6 minutes or until it reaches desired level of doneness. WATCH YOUR BEEF! All broilers are different and yours could cook faster. Cut beef across the grain (diagonally) into very thin slices. Evenly divide beef slices and 2 tablespoons of sour cream in the center of each warm tortilla then top with a lettuce leaf and plenty of chopped cilantro. Fold up and chow down!
SERVING SUGGESTION: A big salad of Romaine lettuce, sliced red onion and sliced avocado, tossed with Easy Balsamic Vinaigrette (see recipe).
