Ingredients

  • 2 lbs lean ground beef
  • 2 cups onion, chopped
  • 2 (15 oz) tomatoes, undrained
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 (10 oz) package frozen corn, thawed
  • 1 cup salsa
  • 3/4 cup water
  • 1 (14 oz) can green chilis, chopped
  • 2 tbsp. parsley
  • 1 tbsp. chili powder
  • 1 tbsp. garlic, freshly minced
  • 1 tsp ground cumin
  • salt and pepper to taste

Preparation

Step 1

Saute onions in a Dutch oven or heavy cooking pot for about 3 minutes.

Add beef and brown until no longer pink. Drain grease from the pot.

Stir in the remaining ingredients and bring to a boil.

Reduce heat.

Simmer uncovered for 10-15 minutes.

OPTIONAL

Top with shredded cheese, parsley and green onions.
