Baked Artichoke-Parsley Cheese Squares

Ingredients
- 1 jar marinated artichoke hearts - (12 oz) drained, liquid reserved
- 4 green onions finely chopped
- 2 garlic cloves finely chopped
- 4 whole eggs beaten
- 2 tablespoons Atkins Bake Mix
- 1/2 teaspoon salt
- 1/4 teaspoon freshly-ground black pepper
- 8 ounces Monterey jack or pepper jack cheese shredded
- 2 tablespoons chopped fresh parsley

Preparation
Step 1
Heat oven to 325 degrees. Chop artichokes and set aside. In a medium skillet, heat reserved marinade liquid 2 minutes over low heat. Add green onion and garlic; sauté 5 minutes, until softened.
In a mixing bowl, combine eggs, bake mix, salt and pepper. Thoroughly mix in cheese, parsley, artichokes and onion mixture.
Transfer to an 8- or 9-inch square baking dish. Bake 30 minutes, until set. Cool slightly before cutting into squares.
This recipe yields 8 servings.
