Ingredients

    jar marinated artichoke hearts - (12 oz) drained, liquid reserved

  • 4

    green onions finely chopped

  • 2

    garlic cloves finely chopped

  • 4

    whole eggs beaten

  • 2

    tablespoons Atkins Bake Mix

  • 1/2

    teaspoon salt

  • 1/4

    teaspoon freshly-ground black pepper

  • 8

    ounces Monterey jack or pepper jack cheese shredded

  • 2

    tablespoons chopped fresh parsley

Directions

Heat oven to 325 degrees. Chop artichokes and set aside. In a medium skillet, heat reserved marinade liquid 2 minutes over low heat. Add green onion and garlic; sauté 5 minutes, until softened. In a mixing bowl, combine eggs, bake mix, salt and pepper. Thoroughly mix in cheese, parsley, artichokes and onion mixture. Transfer to an 8- or 9-inch square baking dish. Bake 30 minutes, until set.
