BACON CHEESEBURGER SOUP

  • 2 lbs lean ground beef
  • 2 cups diced onion
  • 1/2 cup butter
  • 3/4 cup flour
  • 9 cups chicken stock
  • 1 lb pasteurized processed cheese product, cubed or grated
  • 3 cups frozen shredded hash brown potatoes
  • 1/4 cup yellow mustard
  • 1/4 cup ketchup
  • 1/4 cup dill pickle relish
  • 6 slices thick cut bacon, cooked and crumbled
  • 1/2 Tbsp dried parsley
  • Fried potato sticks, for garnish

Preparation:

Sauté the ground beef and onions in a 5-qt Dutch oven until cooked through. Drain off any excess liquid, then return the Dutch oven (with the ground beef mixture inside) to the heat.

Next, add the butter to the ground beef mixture in the Dutch oven and stir until melted. Add the flour and stir. Add the chicken stock and, while stirring, bring the mixture up to a simmer. Simmer until thickened. Add the processed cheese product and the hash brown potatoes and simmer until the cheese is melted and the hash browns have cooked. Add the yellow mustard, ketchup, relish, bacon, and parsley and return to a simmer.

Serve topped with the potato sticks.
