Ingredients
- 1/3 cup uncooked brown rice
- 6 2/3 cup water, divided
- 1 teaspoon vegetable oil
- 4 ounces turkey kielbasa, chopped
- 1/2 cup chopped onion
- 1/2 cup chopped carrot
- 1/2 teaspoon crushed red pepper flakes
- 2 cups low sodium chicken broth
- 1 cup dry lentils
- 10 ounces spinach, torn
Preparation
Step 1
In a small saucepan with a tight-fitting lid, bring rice and 2/3 cup of water to a boil. Reduce heat, cover and simmer for 20 minutes. Meanwhile, heat the oil in a large saucepan over medium heat; add chopped kielbasa and cook until lightly browned. Add onion and carrot; season with crushed red pepper flakes; cook and stir until tender. Stir in remaining water, chicken broth and lentils. Bring to a boil then reduce heat, cover and simmer for 25 minutes. Stir in cooked rice, then the spinach; cook for 5 minutes.
