Bacon-Onion Jam

Ingredients

  • 1/2 lb bacon
  • 2 yellow onions, sliced
  • 3 garlic cloves, minced
  • 3 sprigs thyme
  • salt and pepper to taste
  • 1/4 cup apple cider vinegar
  • 2 tbsp brown sugar
  • 1 tbsp mustard seeds
  • 1/4 cup beer/water
  • 1 tbsp EVOO

Preparation

Step 1

1. In a large non-reactive saucepan over medium heat, render bacon until crispy. Remove and set aside.
2. Add onions to bacon fat and cook over low heat with a large pinch of salt for 12-15 minutes until caramelized, stirring occasionally. Pour off excess fat.
3. Add remaining ingredients and simmer till reduced to two-thirds and looks "jam-like".
4. Remove from heat and stir in bacon.
